This is a great vegan snack that your whole family will love.
2 medium baked sweet potatoes
1 3/4 cup of shredded zucchini
1/2 teaspoon Himalayan pink salt
1/4 teaspoon black pepper
1/2 cup of almond flour or other nut flour of you choice
Mash sweet potatoes in a glass bowl.
Squeeze water out of shredded zucchini then place in bowl with sweet potato and salt and pepper.
mix ingredients till a dough forms.
Form little balls of dough then roll them in almond flour.
Place tots on a parchment paper lined cookie sheet.
preheat oven at 400 bake for 15 minutes then turn and bake 15 more minutes or till golden brown.
