yummy cookies for breakfast

These breakfast cookies are great, tasty and full of nutrition.
These cookies are not only for breakfast. They are also a wonderful snack to pick you up  in the afternoon.
Easy to make and so yummy to eat.

1 Cup of mashed sweet potato
1/4 Cup of coconut sugar 
1/4 Cup of coconut oil
1 1/2 teaspoon pumpkin spice
1 1/4 cup of unsweetened  shredded coconut
1/2 Cup pumpkin seeds
1/4 Cup chopped walnuts
1 Tablespoon of chia seeds
One egg or flax egg (  For flax egg. 1 tablespoon of ground flax seed and 3 tablespoons of cold water.) 

preheat oven to 350
In a bowl mix sweet potato and coconut sugar together
Add coconut oil, and egg, and pumpkin  spice and mix
Add all other ingredients and mix
Form mixture into balls and put on parchment lined cookie sheet , smash the balls down with fork.
Bake for 12 to 15  minutes.
